Nordic Berry Rice Pudding
We love rice pudding here at BB so we were so excited when Tea Rep, Chelsea created this delicious recipe! It uses our NEW Nordic Berry Matcha which not only makes it taste incredible but gives it a huge boost of antioxidants!

Serves: 2
What you will need:
- 1½ Perfect Tea Spoons of Nordic Berry Matcha
- ½ cup of arborio or short grain rice
- 1 can of coconut milk
- 2 pears
- 2 handfuls of blueberries
- 6 Blackberries
- Hemp seeds to garnish
What to do:
1. Add half coconut milk and 1 cup of water to a pan with the rice. Simmer for 35 minutes, adding more water if required.
2. While rice simmers, peel pears and cut into bite-size chunks. Add remaining coconut milk, pears and the Nordic Berry Matcha to a second pan, and simmer until pears are soft and milk thickens.
3. When rice and pears are done, place the blueberries and blackberries on a plate and place in the microwave for 45 seconds to warm the berries. Smush the blueberries into an easy compote.
4. Add everything to a bowl, with hemp hearts to garnish.
5. Enjoy!
