Tutti-FruiTEA Vegan Blondies

These rainbow inspired blondies are creamy. fudgy and topped with a layer of fruity tea goodness! Perfect for taking along to your local pride party!

 

These AMAZING blondies were made by our fabulously talented Teabird, Sam! 


What you will need:

  • For the fruiTEA topping
  • 250ml Oat Cream (we love Oatly!)
    4 Perfect Tea Spoons of Cococabana Coola
    4 Perfect Tea Spoons of Mermaid Mist
    4 Perfect Tea Spoons of Dozy Girl
    1 Perfect Matcha Spoon of Ice Cream Matcha (or your favourite Matcha flavour!)
     
    For the blondies
    320g condensed coconut mylk (that's 1 whole tin!)
    150g peeled bananas (that was about 2 bananas for me!)
    200g plain flour
    1 tsp of baking powder
    Pinch of salt
    1/2 tsp ground cinnamon
    1/4 tsp ground ginger
    1/4 tsp ground nutmeg
    100g of your favourite dairy-free chocolate, chopped into chunks
     Rainbow sprinkles! (optional)

What to do:

1. Let's get cold brewing! Pop 50ml of oat cream into a small bowl/cup and add in your Blue Raspberry tea! Repeat this with each of your flavours and leave them to cold brew in the fridge overnight.
 
2. In the morning, strain out the tea leaves and marvel at your wonderful tea infused oat cream - you've just made the most fantastic natural cake flavouring and colouring!
 
3. Using an electric whisk, beat your bananas until they're a smooth and slightly whipped mixture and then beat in your remaining blondie ingredients, folding in your dairy free chocolate last!
 
4. Into each of your tea colours, stir in a tea spoon of your cake mixture - this will help the two blend easier in a sec!
 
5. Pour your blondie mixture into a greased and lined 25cm square cake pan. Add dollops of your tea colourings on top and swirl with a knife! Alternatively, you could use your colourings to make a polka dot or even striped pattern on top!
 
6. Pop your pan into a pre-heated 170C oven and bake for 30-35 mins - until a knife inserted into the blondies comes out clean.
 
7. As soon as you get them out of the oven, shake a generous handful of sprinkles on top!
 
8. Once they've cooled, chop your brownies into bite-sized pieces, invite the people you love most round for a cuppa or an iced tea and enjoy!
